Loaded Baked Potato Soup

  • 1 small head cauliflower, chopped and steamed

  • 2 russet potatoes, cooked, peeled, and chopped (I just poked holes in mine and microwaved for 7 mins)

  • 1.5 c chicken bone broth

  • 1.5 c whole milk

  • 1/2 c sour cream

  • 1/3 c chives, minced, divided

  • 1/2 tsp salt + 1/4 tsp black pepper

  • Toppings: chopped bacon, chives, shredded sharp cheddar cheese

  1. In a medium soup pot over medium heat, add the steamed cauliflower, cooked potatoes, broth, and milk. Heat until boiling, then blend until creamy. You can use an immersion blender or transfer to a high-speed blender. If using a separate blender, return to the pot when blended.

  2. Add sour cream, half the chives, and salt and pepper. Cook for 5-7 mins on low.

  3. Remove from heat, and add desired toppings (using the remainder of the minced chives)

Makes 4 servings: 330 calories, 21G protein, 23G net carbs, 5G fiber, 8G fat
