Jalapeno Popper Casserole

Jalapeno Popper Casserole:

  • 6 c broccoli florets, chopped

  • 1.5 lb cooked chicken, sliced into pieces

  • 1.5 c cottage cheese

  • 1/2 c whipped cream cheese

  • 1/4 c milk

  • Spice blend: 1 tsp garlic salt, 1/2 tsp black pepper

  • 1 jalapeno, seeded and minced

  • 5 slices bacon, cooked and chopped

  • 1/4 c shredded cheddar cheese

  1. Preheat oven to 375 degrees F and add broccoli and chicken to a casserole dish. Blend cottage cheese, cream cheese, and milk until creamy then mix in.

  2. Sprinkle jalapeno and bacon on top, then add cheese and bake for 15 minutes.

Makes 4 servings: 510 calories, 67G protein, 9G net carbs, 4G fiber, 22G fat
