Lasagna Casserole
Lasagna Casserole:
1 Tbsp olive oil
1 yellow onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 lb cooked ground beef
2 Tbsp dried Italian herbs
1/4 tsp crushed red pepper
1 Tbsp sweetener (I used 0-sugar allulose)
1/2 tsp salt + sprinkle black pepper
2 c marinara sauce (I used Rao’s)
2 c beef bone broth
150 g high-protein lasagna sheets (I used the brand Chickapea but regular lasagna noodles could work, too!)
Heat olive oil in a pot or deep skillet over medium heat
Add onion, bell pepper, garlic and saute until onions are translucent
Add ground beef, herbs, crushed red pepper, sweetener, and salt and pepper. Pour in marinara sauce. Stir and cook for a few minutes
Pour in bone broth and turn up heat to high. Once boiling, add lasagna sheets, breaking them up as you toss them in
Turn down heat to medium low and let simmer until thickened and noodles are soft. I served mine with a big giant bright green mixed salad! Enjoy!
